Surprising my sister

Sooo sorry about not posting anything yesterday…….I went out with my dad for lunch at McAlister’s!!!!!! Soo yummy! My absolute favorite thing to get there is the Chicken Tortilla Soup Breadbowl. It is heavenly! =D I also went and bought a journal so that I can practice my writing skillz. =P

Then, last night, dad took us out for ice cream, or in my case, a smoothie!!! I got Tropical Smoothie Cafe’s Very Berry Green Tea, at least I think that’s the name. It had acai, blueberries, strawberries, and matcha green tea. It was yummy!!!!!!

Also, I recently recieved a bamboo steamer, which I had the opportunity to try out last night. I steamed zuchinni, squash, onion, and bell peppers. I then mixed garlic, salt, and pepper into the veggies. They went on my dinner sandwich along with some turkey, cottage cheese, tomato, basil, and salsa. The sandwich was so huge that I had to eat it open-faced!!!!

This morning, I tried yet another new strength training workout. Today’s was Exercise TV’s Incredible Abs 2, which I found on youtube. =P It was pretty intense. I think that I would do it again sometime, but not every day.

Tonight is my sister’s half-year birthday. Since we won’t be in the country for her actual birthday, I decided to take her out to her favorite mexican restaurant tonight instead!!!!!! I can hardly keep from spilling it to her!!!! It’s gonna be a late dinner though, because we’re trying out Zumba for the first time tonight. Classes are being given at our church from 6:15 to 7:15. I’m pretty excited about that too!!!!!!!

Well, I have to get back to school!!!!


Out and about part 2

I’ve got another busy day ahead of me!! Going to lunch with my pastor, getting my hair cut!, and going to dinner with some family. Oh, and school. =P

I woke up bright n’ early this morning and had an extremely boring breakfast. Grits and orange juice. Exciting, no? It was tasty, nonetheless. Then, I did a 20 min strength routine that included tons of squats, lunges, pushups, crunches and all of that fun stuff.

Got right down to work, and I’ve almost finished everything that I had to do for school today!!!!! Sooooo happy!!!!!!!

I get attacked by my blender

I honestly own the most ornery blender in the world. Today, I was making a coffee protein shake and, even though the blender lid was tightly closed, somehow air pressure or something raised it up and I got bathed in coffee. That’s one way to start the day. =D

This weekend was suuuper fun….. after church, we spent all yesterday afternoon at a friend’s, cooking out, swimming, and just having tons of fun. I was sad when it was time to come home. =P

Now, I’m just doing my school work, and trying to do some extra work today so that I can have a “lighter” rest of the week.

I’ve got tons of recipes that I want to try, from Julia Child’s ratatouille to spaghetti squash to shrimp creole. I also have a stack of good cookbooks to look through. Am I the only one who truly gets a kick out of reading cookbooks? I just think that it’s sooo much fun. =P I’ll keep ya’ll posted on how the cooking is going this week!!!! I’m soooo excited about all of my new recipes!!!!!!!!!

Out and about

I have just been out and about this weekend! Friday I shopped with a friend, yesterday we met up with some other friends, and today we’re going to a different church and some other friends’ home. Fun, but busy day.

Really, though, not too much is going on….I’ve been reading some blogs and saw this wonder ful looking muffin recipe here:

You know that I now have to go and try to make some muffins of my own.

Speaking of baking, I tried the cake mix cookies found here: I ended up substituting 1/2 cup of applesauce for the oil and using 2 eggs instead of one. I used a lemon cake mix, and the cookies tasted like Jumbles….but fluffier. The whole house smelled lemony-fresh =D and, because I don’t want to serve anything less than wonderful to my family, I tried a cookie (or two….or four) straight out of the oven. YUM!!!!!

As for my attempt to gain weight in a healthy way to beat my eating disorder, a doctor suggested Ensure shakes. Each one has 250-350 calories and they are full of essential vitamins and minerals and fats. Even hospitals use them!!!! They also taste pretty good, the ones that I’ve tried so far are the dark chocolate and the cafe latte. They don’t taste like “health” shakes, and I’ve been instructed to drink at least 2 per day.

Quality Friend Time!

I get to skip school todaaaaaaay!!!!!!!!!!

Just in case you’re wondering, the above sentence was typed as I was singing it, which is why it is in italics. If you’re wondering why I get to skip school today, it’s because one of my BEST FRIENDS EVER is here and we’re gonna go shopping. She got to skip school because she’s in her band and they have a competition tomorrow. So, she came over last night, and we’re gonna hang out today!

Last night, we watched Killers. It was cute andfun, but not something that I would watch again. Ashton Kutcher, to me, isn’t believeable as a spy. Too goofy. But that’s just my opinion, and if any of you people out there happened to love the movie, don’t be offended. =D I’m likely to just write out whatever I’m thinking at the moment. For example, one night, my family and I were at some friends’ house, and it was late. I took one look at mom and informed her that she looked “puffy”. Whoops. Only later did I actually process that sentece and realize that I should have kept it in my head. Oh well. At least everyone knows where they stand with me.

Breakfast this morning was uber-boring, so I’m just gonna tell you all about the snack bars that I bought. I know, I know, I said that I wouldn’t talk about snacks as much, buuuuut I’m pretty excited here!!!

Loooong day

As most of you know, I am currently dealing with an eating disorder. I’m getting a whole lot better, but still need to gain some weight. Today, I went and talked with a psychiatrist(ugh) for the first time. It was pretty stressful, and I’ve had the worst day in a long time. I went ahead and did most of today’s work yesterday, so that I would have time to mentally prepare for today =D.  I have come to understand in the past few weeks that it is possible to maintain a healthy, yet indulgent lifestyle. I don’t ever want to go down the starvation road again!!!!!!!! Please pray for me, so that God will help me have a successful recovery. I have really enjoyed blogging, even though I don’t have much traffic yet, I fell that this blog has been a great way for me to register what is going on and to look back and see my progress.

Wow! I am soooo sorry if I bored you all with my musings on life. Lets move on to something much more exciting: food.

Actually, both breakfast and lunch today were boring, but I’m really excited about dinner!!!!!! Lemon pepper tilapia!!!!!!!!!!!!!! Yummy!

I’ll cook the fish and serve it with some rice and something else which I have yet to think of. =D

Time Flies

Wow!!!!! Time just seems like it has been flying by!!! I’ve had people to visit every day for the past few days and the rest of my week is already filling up!! I can’t even believe that I’m already in my sixth week of school!!!!!

This morning, I had yet another yummy bowl o’ overnight oats. Last night I prepared apple cinnamon oatmeal and put some chopped frozen peaches in the bowl to thaw overnight. Woke up in the morning, added some yogurt and had a wonderful, fruity, cinnamon-y breakfast.

I’ve also been trying out a new strength training workout instead of the pilates one that I used to do. I really enjoy it, but the only problem is that I don’t actually have dumbbells, so I use canned food! I probably look like a total idiot, but I actually get a fairly good workout.

I’ve been doing tons of school stuff this week…..trying to work ahead so that I can have a long weekend. Oh, the beauty of homeschooling! =D

I have contiuned not to count calories, and I can honestly say that  I’ve never been less stressed. My body truly knows what it needs and how much it needs, and I’m learning to listen to it.
