Calorie Counting No More!

 I don’t know if I’ve said this before, but I’ve struggled with weight and self-esteem issues recently. First, I wanted to lose just a little weight, and then lost waaay too much, but still didn’t want to allow myself to have treats. I’ve been getting a whole lot better (eating chocolate every day =D), and God has really helped me through this.

The only thing that I hadn’t yet given up was calorie counting. For some reason, I thought that it would help me. Don’t get me wrong, it may work for some of you, but it just stresses me out. So, as of today, I’m not gonna count my calories. I still want to eat healthily, and I trust myself to know when I need to eat more and when I can treat myself. I’m just gonna do what I should have been doing all along: listen to my body.

Breakfast was boring, grits and a Chobani greek yogurt. Tasty, though.

Lunch was yummy. I made a GINORMOUS salad, with lettuce, bell pepper, cucumber, tomatoes, onion, mushrooms and strawberries. I topped it with some cottage cheese and a drizzle of honey dijon salad dressing! On the side, I ate a string cheese and a three musketeers mini. Sooo good!!!!!!!

We’re taking it pretty slow today…..the only thing on the agenda is having some friends over at 3 ish. I’m looking forward to a nice, relaxing Saturday!

Tests, tests and a yummy treat!

I think I may be seriously addicted to overnight oats. I had them again this morning. This time it was my beloved apple-cinnamon irish oatmeal with a dash of vanilla and a cup of peach yogurt. It was like fruity, cinnamon-y heaven in a bowl. I ate it in about 5 seconds flat =D. You know, I’m realizing more and more each day that it takes a very special person to be a food blogger. You have to really love it, and who else but a fit food blogger would have an addiction to oatmeal???? I feel privileged to be a part of this group!

Now, I would like to say that I am FINALLY done with this week’s testing!!!! Whoooo!!!!!!!!!!!!! I had three of them to do…..not fun. Sooo, in order to congratulate myself, I decided to try out something that I had read about but never attempted: Cocoa-Banana “Soft-serve”!

It’s super easy, just a frozen banana and some cocoa!! Throw it in the blender and you got yourself a bowl full o’ yumminess. I’ll admit that I didn’t believe that a blended frozen banana could actually look and taste like soft-serve, but man was I wrong!

Now, I’m just hangin’ out and gettin’ ready to start the weekend!!!!!!!!!!!!!


You know those days when you wake up just feeling sorta gross?? Well, I’m having one of those.

It doesn’t make any sense, really. Last night was wonderful and finished with a cherry limeade from sonic! This morning, I had a yummy bowl of overnight oats w/ strawberry yogurt and vanilla protein powder for breakfast. This should all contribute to a wonderful day!

But instead, I feel sluggish, slightly queasy and tired. I went ahead and worked through a lot of my school because I literally had nothing else to do. =P So now, I just had lunch and decided to come and vent on my blog. After all, if I can’t vent on my own blog every once in a while, what good is it? =D

Well, I am sorry if my complaints are annoying or obnoxious, and I promise that my next post will be decidedly more upbeat! Especially if dinner involves the massive sweet potato that I have sitting in my cabinet.

Also, I would just like to say how much I enjoy reading other foodie blogs!!!!!! It is really and truly one of my favorite things to do!!!!!!!!!!!

Apple Cinnamon Oatmeal, I Love Thee

Guess what I had for breakfast???? Hmmmm

If you said Apple Cinnamon Oatmeal, you’re right!!!!! Now how on earth did you guess?? hahaha

Anywho, I didn’t happen to have any yogurt this morning, so I pulled out a package of instant apple cinnamon irish oatmeal! It was soooo good!!!!! When, I made it, the whole house filled with its yummy aroma!!!! I think I could write a poem about it…..nah, I’ll spare you that one! Along with my bowl’o oats, I had my first mocha protein shake in over 2 weeks!!!!! I made this one a little differently though, with 2 scoops of Aria vanilla protein powder, a heaping tablespoon of jell-o chocolate pudding mix and coffee. It was amazing, if I do say so myself!!!!!!

Now, I’m both doing school work and blogging. How is that possible you ask? I’m supposed to be researching for a History paper, but I took some time off! =P Don’t worry, it is not due until Friday, and it’s actually pretty easy! Oh  and before I forget, I just had the chocolate chip brownie larabar!!!!! It is wonderful! I definitely reccommend it to anyone who likes Larabars!!!!!!!

On a sad note, a good friend of my family’s passed away recently, and we’re going to the funeral later on today. Pray for his family and friends please!!!!!

Heeeyy!! Well, I’m FINALLY back home!!!!!! The trip was extremely uneventful(I fell asleep numerous times) and the food was boring, so I’m just gonna skip over all of that!!!!!!!!!!!!!

Long time, no post

Heeey!! I’m soooo sorry its been so long since I posted!!!! You know how it is….hours in the car w/ no internet access, then a whirlwind tour of whatever city you’re in…fun, but doesn’t allow a whole lot of free time! Well……..I’m baaaaaack!!!! =D
I would l=just like to stop and dedicate a small portion of this post to the wonderful creation that is greek yogurt! I just recently tried it, and have ALREADY fallen in love! =D
Also, because we’ve been on the cost for most of this trip, I’ve had the opportunity to experiment lots of seafood dishes!!!!! yummy!!! I’ve had cajun tilapia, mahi mahi with mango salsa, and my favorite, shrimp creole. If you have never had shrimp creole, you must!!!!! It’s shrimp simmered in a spicy tomato sauce with tons of veggies, served over rice or pasta. When I ordered it at a Cajun restaurant, I may or may have not eaten an ENTIRE platter of it……..whoops! =D Another new passion is strawberry italian ice!!! It is soooo refreshing!!

As for school, I attempted to cram two weeks in to one so that I could take this past week off. Talk about fun =P. It payed off though, because I got to spend hours swimming and tanning at the pool and the beach, spending time with my family and meeting new people. It’s been a great trip, but now I’m pretty tired and looking forward to getting home tomorrow. Of course, I have already started back to school in full force….which is probably good, because at least I’ll have something to do in the car =D.

Overnight Oats!!!!

I’m sooooo excited!!!!!! I’m making oats for the FIRST time ever!!! I saw the recipe on and have been wanting to try it since. I’ll repost the original recipe. Julie, apparently, actually cooks the oatmeal and puts it in the fridge overnight, mixing in yogurt in the morning, instead of letting raw oatmeal soak in yogurt overnight. That idea sounded better to me, so it’s what I tried. It will be perfect because my dad wants to leave at 7 AM tomorrow, so I needed something that would be super quick!!!!!

Here’s what I put in it:

Prepared oatmeal


Tomorrow morning I will add:

Vanilla yogurt

Chocolate protein powder

Pretty complete quick breakfast, eh? I can’t wait!!!!

Mom and my sister went out tonight, so dad and I stayed home and watched Teen Wolf!! Such a cute movie! I cannot believe that Hollywood is thinking of remaking it! No one can replace Michael J. Fox!!!!!!!!!!

Wow, I guess I’m more tired than I thought.

Anyhow, I would just like to say that I have overcome my fear of Larabars and have become fully addicted to them! The cherry pie flavor is amazing! I think I like fruit flavors best, and will stick to luna bars or pria bars for the chocolatey ones!!!! =D I’ve been feeling a whole lot better about myself lately, so that’s really good!!!!!

I’m gonna go before I bore you all to death with my random musings about food!
