Out and about part 2

I’ve got another busy day ahead of me!! Going to lunch with my pastor, getting my hair cut!, and going to dinner with some family. Oh, and school. =P

I woke up bright n’ early this morning and had an extremely boring breakfast. Grits and orange juice. Exciting, no? It was tasty, nonetheless. Then, I did a 20 min strength routine that included tons of squats, lunges, pushups, crunches and all of that fun stuff.

Got right down to work, and I’ve almost finished everything that I had to do for school today!!!!! Sooooo happy!!!!!!!

I get attacked by my blender

I honestly own the most ornery blender in the world. Today, I was making a coffee protein shake and, even though the blender lid was tightly closed, somehow air pressure or something raised it up and I got bathed in coffee. That’s one way to start the day. =D

This weekend was suuuper fun….. after church, we spent all yesterday afternoon at a friend’s, cooking out, swimming, and just having tons of fun. I was sad when it was time to come home. =P

Now, I’m just doing my school work, and trying to do some extra work today so that I can have a “lighter” rest of the week.

I’ve got tons of recipes that I want to try, from Julia Child’s ratatouille to spaghetti squash to shrimp creole. I also have a stack of good cookbooks to look through. Am I the only one who truly gets a kick out of reading cookbooks? I just think that it’s sooo much fun. =P I’ll keep ya’ll posted on how the cooking is going this week!!!! I’m soooo excited about all of my new recipes!!!!!!!!!

Out and about

I have just been out and about this weekend! Friday I shopped with a friend, yesterday we met up with some other friends, and today we’re going to a different church and some other friends’ home. Fun, but busy day.

Really, though, not too much is going on….I’ve been reading some blogs and saw this wonder ful looking muffin recipe here: http://www.snackingsquirrel.com/

You know that I now have to go and try to make some muffins of my own.

Speaking of baking, I tried the cake mix cookies found here: http://pbfingers.com/2010/04/11/cookie-sunday/. I ended up substituting 1/2 cup of applesauce for the oil and using 2 eggs instead of one. I used a lemon cake mix, and the cookies tasted like Jumbles….but fluffier. The whole house smelled lemony-fresh =D and, because I don’t want to serve anything less than wonderful to my family, I tried a cookie (or two….or four) straight out of the oven. YUM!!!!!

As for my attempt to gain weight in a healthy way to beat my eating disorder, a doctor suggested Ensure shakes. Each one has 250-350 calories and they are full of essential vitamins and minerals and fats. Even hospitals use them!!!! They also taste pretty good, the ones that I’ve tried so far are the dark chocolate and the cafe latte. They don’t taste like “health” shakes, and I’ve been instructed to drink at least 2 per day.

Long time, no post

Heeey!! I’m soooo sorry its been so long since I posted!!!! You know how it is….hours in the car w/ no internet access, then a whirlwind tour of whatever city you’re in…fun, but doesn’t allow a whole lot of free time! Well……..I’m baaaaaack!!!! =D
I would l=just like to stop and dedicate a small portion of this post to the wonderful creation that is greek yogurt! I just recently tried it, and have ALREADY fallen in love! =D
Also, because we’ve been on the cost for most of this trip, I’ve had the opportunity to experiment lots of seafood dishes!!!!! yummy!!! I’ve had cajun tilapia, mahi mahi with mango salsa, and my favorite, shrimp creole. If you have never had shrimp creole, you must!!!!! It’s shrimp simmered in a spicy tomato sauce with tons of veggies, served over rice or pasta. When I ordered it at a Cajun restaurant, I may or may have not eaten an ENTIRE platter of it……..whoops! =D Another new passion is strawberry italian ice!!! It is soooo refreshing!!

As for school, I attempted to cram two weeks in to one so that I could take this past week off. Talk about fun =P. It payed off though, because I got to spend hours swimming and tanning at the pool and the beach, spending time with my family and meeting new people. It’s been a great trip, but now I’m pretty tired and looking forward to getting home tomorrow. Of course, I have already started back to school in full force….which is probably good, because at least I’ll have something to do in the car =D.

Overnight Oats!!!!

I’m sooooo excited!!!!!! I’m making oats for the FIRST time ever!!! I saw the recipe on pbfingers.com and have been wanting to try it since. I’ll repost the original recipe. Julie, apparently, actually cooks the oatmeal and puts it in the fridge overnight, mixing in yogurt in the morning, instead of letting raw oatmeal soak in yogurt overnight. That idea sounded better to me, so it’s what I tried. It will be perfect because my dad wants to leave at 7 AM tomorrow, so I needed something that would be super quick!!!!!

Here’s what I put in it:

Prepared oatmeal

Blueberries

Tomorrow morning I will add:

Vanilla yogurt

Chocolate protein powder

Pretty complete quick breakfast, eh? I can’t wait!!!!

Mom and my sister went out tonight, so dad and I stayed home and watched Teen Wolf!! Such a cute movie! I cannot believe that Hollywood is thinking of remaking it! No one can replace Michael J. Fox!!!!!!!!!!

Wow, I guess I’m more tired than I thought.

Anyhow, I would just like to say that I have overcome my fear of Larabars and have become fully addicted to them! The cherry pie flavor is amazing! I think I like fruit flavors best, and will stick to luna bars or pria bars for the chocolatey ones!!!! =D I’ve been feeling a whole lot better about myself lately, so that’s really good!!!!!

I’m gonna go before I bore you all to death with my random musings about food!

A good weekend so far

This weekend has really been a good one. I got to spend time with my dad for the first time in 6 weeks, watch a couple of movies, visit with friends, go to church, and later today I will visit some family. It might sound boring to ya’ll, but I’ve really enjoyed it.

One thing that I’m a little less than excited about is our upcoming two-week trip. Don’t get me wrong, I really do want to see everyone that we will visit, I just REALLY don’t like road trips. Especially 2 week long ones. But, oh well, it’ll be a good experience, I guess.

I knew that we would be staying a little longer at church today so that my dad could see everyone, so I had a protein-packed breakfast! I scrambled an egg with some chopped tomatoes, onions and bell peppers. I then put the scramble into a flour tortilla and had a “breakfast burrito, Jen-style”. To drink, I had my first mocha protein shake in a while. It was sooo good and the entire meal kept me full until lunchtime.

My dad had been wanting to go to Wendy’s since he got here, so guess where we had lunch???? I ordered the Ultimate Chicken Grill with no honey mustard sauce(I usually like honey mustard, but not this sauce…strange, I know), with a side of mandarin oranges and a lemonade. It was a pretty darn good meal, if you ask me.  The protein from the chicken will keep me full during the one hour trip to my grandmother’s. =D

I know I usually don’t talk about snacks, but today I’m stuck between two.

1. Carmel Nut Brownie Luna Bar

2. Banana Bread Larabar

I’ve had the luna before, and I love it. I would like to try the larabar, but the 10g of fat and 230 cals. sort of threw me off. I know that it is healthy fat and the bar is made from natural food, but I also know that we are probably going to eat out again at dinner with my dad’s brother and his family. Both are good snack options, so I’m having a hard time choosing!

Which do you prefer, Luna Bars or Larabars?

I know that this is gonna sound rude, but I really have no idea what to talk about with my cousin. She is a year younger than me, but we are completely different. She talks about all of the different guys that she likes and stuff like that. If you’re homeschooled, like me, and don’t get out much, then you don’t deal with all of that. At least I don’t. So pray for me please! I really love her, but it just seems that we don’t really have a whole lot to talk about.

That’s about all I’ve got for now! Sorry for torturing you with this uber-long post! =D

Really. Big. Day.

I am soooo incredibly sorry about not having posted at all today!!!!!!!!!!! I’ll just breeze through what happened yesterday after my last post all the way through today.

As you already know, I went with my friend to youth group!!!! It was sooo much fun (and may or may not have involved a cherry limeade from sonic =P). I spent the night there and came back eaaaarly this morning and did pilates =P. After that, I made up a pot of extra-strong coffee for a mocha protein smoothie and got started on today’s school work.

Lunch today was pretty much exactly the same as yesterday’s (just because it was soooo yummy =P, so I won’t go into details about it.

Then, I went to confirmation class, which was also pretty good!!!!!

Today, I bought some new stuff that I’m really excited about:

  • Aria Vanilla Protein for Women (new protein flavor!!! I can use this one in fruit shakes too!!!!)
  • 3 Pria PowerBars (in Chocolate Peanut Crunch, French Vanilla Crisp, and Mint Chocolate Cookie.)
  • A cottage cheese breakfast thing with cottage cheese on one side and a little container of fresh strawberries to mix into it!
  • Progresso Reduced Sodium Chicken Gumbo (which I already ate….sooo good! All of the Progresso soups that I have tried taste so fresh!!!!)
  • Fig Newtons!!!!!! (haven’t had these in YEARS!!!)

Well, I’m about to go to bed, because I have to be at the airport at 11 PM to pick my dad up. Let’s just pray that he makes all of his connections and actually arrives.
